Fresh oregano should be refrigerated immediately after purchase to maintain freshness and safety. Room temperature storage is not recommended for extended periods.

Refrigerator

7-10 days

Store unwashed fresh oregano sprigs loosely wrapped in a damp paper towel inside a plastic bag, or stand upright in a glass with about an inch of water, covered loosely with a plastic bag. Store in the crisper drawer.

Freezer

10-12 months

Wash and thoroughly pat dry fresh oregano. Leaves can be frozen whole or chopped. Store in an airtight freezer bag or container, or freeze in ice cube trays with water or olive oil, then transfer to a freezer bag.

Signs of Spoilage

  • Wilting or limp leaves
  • Darkening or black spots on leaves
  • Slimy or mushy texture
  • Mold growth
  • Off-odor or sour smell

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Fresh oregano should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour, as bacteria can multiply rapidly in the danger zone.
