Fresh mushrooms spoil quickly at room temperature. For best quality and safety, refrigerate immediately.

Refrigerator

5-7 days

Store unwashed fresh oyster mushrooms in their original packaging or a paper bag in the refrigerator. Avoid airtight containers as they trap moisture and accelerate spoilage. Do not wash until ready to use.

Freezer

10-12 months

For best quality, mushrooms should be blanched or sautéed before freezing. Cool completely, then freeze in a single layer on a baking sheet before transferring to freezer bags or airtight containers.

Signs of Spoilage

  • Slimy or sticky texture
  • Darkening or black spots
  • Strong, unpleasant odor
  • Visible mold growth

Room Temperature Safety

Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

To ensure safety, fresh oyster mushrooms should be refrigerated promptly after purchase and not left out at room temperature for extended periods.

Expert Tips

Safe Handling

1

Gently clean mushrooms with a damp cloth or soft brush just before use; avoid soaking them in water.

2

Wash hands thoroughly with soap and water before and after handling fresh produce.

3

Keep raw mushrooms separate from raw meat, poultry, and seafood to prevent cross-contamination.

4

Cook mushrooms thoroughly until tender and heated through.
