Unopened oyster sauce can be stored in a cool, dark pantry until its 'best by' date, typically 1-2 years. Once opened, it must be refrigerated.
Refrigerator
1-6 months (opened)
Always refrigerate oyster sauce immediately after opening. Keep tightly sealed to prevent contamination and maintain quality.
Freezer
Not recommended for quality, but safe indefinitely at 0°F (-18°C)
While safe indefinitely, freezing oyster sauce is not recommended due to potential changes in texture and flavor upon thawing. If freezing, transfer to an airtight, freezer-safe container, leaving headspace.
Signs of Spoilage
- Mold growth on the surface or lid
- Off-odor (sour, fermented, or unusual smell)
- Discoloration (darkening or unusual color changes)
- Unusual texture (slimy, excessively thick, or separated)
- Bulging or leaking container
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave opened oyster sauce at room temperature for more than 2 hours. Discard if left out longer, as bacteria can multiply rapidly in the danger zone.
Safe Handling
