Pantry

Not Recommended

Unsafe

Prepared curry, once opened or if sold refrigerated, should not be stored at pantry temperatures. Unopened, shelf-stable (canned/retort pouch) chickpea curry can be stored in a cool, dry place until its 'Best By' date, typically 1 year or more. Once opened, it must be refrigerated.

Refrigerator

3-4 days

Store promptly in airtight containers. Ensure the refrigerator temperature is maintained at or below 40°F (4°C).

Freezer

2-3 months

Freeze in airtight, freezer-safe containers or heavy-duty freezer bags. Label with the date. For best quality, consume within 2-3 months.

Signs of Spoilage

  • Sour or off-odors
  • Visible mold growth
  • Slimy or sticky texture
  • Discoloration
  • Fizzy appearance or taste

Room Temperature Safety

2-hour rule (1 hour if temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including cooked chickpea curry, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour before refrigeration or discarding.

Expert Tips

Safe Handling

1

Reheat chickpea curry to an internal temperature of 165°F (74°C) using a food thermometer.

2

Bring sauces, soups, and gravies to a rolling boil when reheating.

3

Do not leave cooked chickpea curry at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).

4

Divide large amounts of hot curry into shallow containers for quicker cooling before refrigerating.

5

Avoid cross-contamination by using separate utensils and cutting boards for raw ingredients and cooked foods.
