For best quality, blanch cabbage before freezing. Cut or shred, blanch in boiling water for 1.5 minutes, cool quickly in ice water, drain, pack into freezer-safe bags or containers, removing as much air as possible.

  • Significant discoloration (darkening, browning, or black spots)

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including cut cabbage, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Promptly refrigerate cut cabbage to keep it out of the danger zone and slow bacterial growth. Discard any cabbage left at room temperature beyond the safe time limits.
