Cover loosely with plastic wrap or aluminum foil. Store in the coldest part of the refrigerator.

Freezer

To freeze, wrap the pie tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag or airtight container. Thaw in the refrigerator.

Signs of Spoilage

  • Mold growth on the crust or filling
  • Off-odor, sour, or unpleasant smell
  • Slimy or sticky texture on the filling
  • Significant discoloration of the filling

Room Temperature Safety

The 2-hour rule applies: Perishable foods, including pecan pie, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Pecan pie should not remain in this temperature range for too long.

Always refrigerate pecan pie promptly after serving. Discard any pie left out at room temperature beyond the safe time limits.

1

Always refrigerate pecan pie within 2 hours of baking or purchasing. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.

3

When thawing frozen pie, always thaw in the refrigerator, not at room temperature.
