Refrigerator

Keep opened jars tightly sealed in the refrigerator. Ensure plums remain submerged in pickling liquid for best quality and safety. Always use clean utensils to remove plums.
Freezer
Indefinitely safe at 0°F (-18°C); best quality within 6-8 months
While safe indefinitely, freezing may alter the texture of pickled plums, making them softer. Store in airtight, freezer-safe containers.
Signs of Spoilage
- Mold growth on the surface or plums
- Off-odor (sour, yeasty, or putrid smell)
- Discoloration or darkening of the plums
- Slimy or mushy texture
- Cloudy or murky pickling liquid that was previously clear
- Bulging lid on an unopened jar (indicates gas production from spoilage)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Once opened, pickled plums should be refrigerated immediately. Do not leave opened jars at room temperature for extended periods, as this can promote spoilage, despite the acidity.
