Pantry
Several days to 1 week (unripe)
Store unripe plantains at room temperature (60-70°F / 15-21°C) away from direct sunlight to ripen. Do not refrigerate unripe plantains as it can stop the ripening process.
Refrigerator
Up to 1 week (ripe)
Once ripe, plantains can be stored in the refrigerator to slow further ripening and extend shelf life. The skin may darken, but the flesh remains good. Store in a plastic bag.
Freezer
8-12 months
Peel and slice plantains before freezing. Blanching is optional but can help preserve quality. Store in airtight freezer bags or containers.
Signs of Spoilage
- Mold growth
- Unpleasant, sour, or fermented odor
- Excessive softness or mushy texture
- Significant discoloration beyond normal ripening (e.g., widespread dark, slimy areas)
- Leaking or oozing liquid
Room Temperature Safety
40°F–140°F
Cooked plantains should not be left at room temperature for more than 2 hours; discard after 1 hour if temperature is above 90°F (32°C). Raw plantains are typically stored at room temperature for ripening, but once cut or cooked, they are subject to the 2-hour rule.
Safe Handling
Wash plantains thoroughly before peeling or cutting.
Cook plantains to an internal temperature appropriate for the recipe, ensuring they are tender.
Prevent cross-contamination by using separate cutting boards and utensils for raw plantains and other foods, especially ready-to-eat items.
