Raw pork belly should not be stored at room temperature due to rapid bacterial growth. Refrigerate or freeze promptly.
Refrigerator
3-5 days
Store raw pork belly in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at or below 40°F (4°C).
Freezer
4-6 months
For best quality, wrap raw pork belly tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a freezer bag, removing as much air as possible. Freeze at 0°F (-18°C) or below.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-green discoloration
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Never leave raw pork belly out at room temperature. Refrigerate or freeze promptly to prevent the growth of harmful bacteria.
Safe Handling
Cook all raw pork belly to an internal temperature of 145°F (63°C) as measured with a food thermometer, followed by a 3-minute rest time.
Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw and cooked pork.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw pork.
Thaw frozen pork belly in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
