Fresh mushrooms are highly perishable and should be refrigerated promptly. Pantry storage is not recommended for safety or quality beyond immediate use.
Refrigerator
5-7 days
Store unwashed mushrooms in their original packaging or a paper bag in the refrigerator. This allows them to breathe and prevents moisture buildup, which can lead to spoilage. Do not store in an airtight container.
Freezer
10-12 months
For best quality, clean and slice mushrooms, then blanch or sauté them before freezing. Pack in airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Slimy or sticky texture
- Dark spots or discoloration
- Strong, unpleasant odor
- Visible mold growth
Room Temperature Safety
40°F–140°F
Perishable foods, including fresh mushrooms, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.
Safe Handling
Wash mushrooms gently under cool running water or wipe with a damp cloth just before use, not in advance.
Avoid cross-contamination by keeping raw mushrooms separate from raw meats and poultry.
Cook mushrooms thoroughly, especially if part of a dish containing other ingredients that require specific internal temperatures (e.g., 165°F for poultry or leftovers).
