Prepared shredded kataifi should be kept refrigerated or frozen. Leaving it at room temperature for more than 2 hours can lead to rapid bacterial growth.

Refrigerator

3-4 days

Store in an airtight container or tightly wrapped in plastic wrap to prevent drying out and absorption of odors. Place in the coldest part of the refrigerator.

Freezer

2-3 months

Wrap tightly in plastic wrap, then in aluminum foil or place in a heavy-duty freezer bag to prevent freezer burn. Thaw in the refrigerator before use.

Room Temperature Safety

Do not leave prepared shredded kataifi at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour. Discard any kataifi left in the danger zone for too long.
