Raw beef should never be stored at room temperature due to rapid bacterial growth.
Refrigerator
3-5 days
Store raw beef in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep at 40°F (4°C) or below.
Freezer
6-12 months
For best quality, wrap raw beef tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a freezer bag. Label with the date.
Signs of Spoilage
- Sour or putrid odor
- Slimy or sticky texture
- Dull, grayish-brown discoloration
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Never leave raw beef at room temperature. Refrigerate or freeze promptly after purchase.
Safe Handling
Always wash hands with soap and water before and after handling raw meat.
Use separate cutting boards, plates, and utensils for raw beef and ready-to-eat foods to prevent cross-contamination.
Cook all raw beef steaks and roasts to a minimum internal temperature of 145°F (63°C) as measured with a food thermometer, followed by a 3-minute rest time.
Thaw raw beef safely in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave (cook immediately after thawing).
