Raw beef should never be stored at room temperature due to rapid bacterial growth.

Refrigerator

3-5 days

Store raw beef in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep at 40°F (4°C) or below.

Freezer

6-12 months

For best quality, wrap raw beef tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a freezer bag. Label with the date.

Signs of Spoilage

  • Sour or putrid odor
  • Slimy or sticky texture
  • Dull, grayish-brown discoloration
  • Mold growth

Room Temperature Safety

The 2-hour rule: Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Never leave raw beef at room temperature. Refrigerate or freeze promptly after purchase.

Thaw raw beef safely in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave (cook immediately after thawing).
