Raw calamari is highly perishable and should not be stored at pantry temperatures. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw calamari in the coldest part of the refrigerator, ideally at 40°F (4°C) or below. Keep it in its original packaging or in a sealed container to prevent drips and cross-contamination. Place it on a plate or in a pan to catch any liquid.
Freezer
3-6 months
For best quality, freeze raw calamari in airtight packaging, heavy-duty freezer bags, or freezer-safe containers to prevent freezer burn. Thaw frozen calamari in the refrigerator, never at room temperature.
Signs of Spoilage
- Strong, fishy, or sour odor
- Slimy or sticky texture
- Dull, faded, or grayish discoloration
- Cloudy eyes (if whole squid)
Room Temperature Safety
40°F–140°F (4°C–60°C)
Raw calamari should not be left at room temperature within the danger zone (40°F–140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour. Discard any calamari left out longer than these recommended times.
Safe Handling
Wash hands thoroughly with soap and water before and after handling raw calamari.
Prevent cross-contamination by keeping raw calamari separate from other foods, especially ready-to-eat items. Use separate cutting boards, plates, and utensils.
Cook calamari to an internal temperature of 145°F (63°C) as measured with a food thermometer.
Refrigerate or freeze raw calamari promptly after purchase.
