For optimal quality and safety, raw horseradish root should be stored in the refrigerator.
Refrigerator
1-2 months
Store whole, unpeeled roots in a plastic bag in the crisper drawer. Once peeled or grated, store in an airtight container and use within 1-2 weeks.
Freezer
up to 6 months
Grate horseradish and pack tightly into freezer-safe containers or bags. For best quality, do not thaw before using.
Signs of Spoilage
- Soft or mushy texture
- Mold growth
- Significant discoloration (dark spots)
- Unpleasant, sour, or off-odor
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including cut or prepared horseradish, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), discard after 1 hour.
Safe Handling
Wash raw horseradish root thoroughly under running water before peeling or grating.
Use a clean brush to scrub the root surface if necessary.
Prevent cross-contamination by using separate cutting boards and utensils for horseradish and other foods, especially ready-to-eat items.
Wear gloves when grating horseradish to protect hands from irritation.
