Refrigerator

Store raw lengua in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, freeze raw lengua in airtight packaging or heavy-duty freezer bags to prevent freezer burn. Label with the date. While safe indefinitely at 0°F (-18°C), quality may decline after 3-4 months.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull or discolored appearance (e.g., greenish or grayish spots)
- Any signs of mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Bacteria can multiply rapidly in this temperature range.
Always refrigerate or freeze raw lengua promptly. Discard any raw lengua left in the danger zone for longer than the recommended time limits.
Safe Handling
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw lengua.
Prevent cross-contamination by keeping raw lengua separate from other foods, especially ready-to-eat items. Use separate cutting boards, plates, and utensils.
Thaw frozen lengua in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
Cook raw lengua to an internal temperature of at least 145°F (63°C) as a whole cut, followed by a 3-minute rest time. For stewed or braised preparations, ensure it reaches a safe temperature throughout.
Refrigerate or freeze cooked lengua within 2 hours of cooking (1 hour if the ambient temperature is above 90°F/32°C).
