Raw ground meat should not be stored at room temperature. Refrigerate or freeze immediately to prevent rapid bacterial growth.
Refrigerator
1-2 days
Store raw wagyu burgers in the coldest part of the refrigerator, ideally at 40°F (4°C) or below. Keep in original packaging or place in a clean, sealed container or bag to prevent drips and cross-contamination with other foods.
Freezer
3-4 months
For best quality, wrap raw wagyu burgers tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a heavy-duty freezer bag. Label with the date. Thaw safely in the refrigerator, never at room temperature.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-brown color
- Presence of mold
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave raw wagyu burgers at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave out for more than 1 hour. Bacteria multiply rapidly in the danger zone, making the food unsafe to eat.
Safe Handling
Cook raw ground wagyu burgers to a safe minimum internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw meat.
Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw and cooked meat.
Never thaw raw meat at room temperature. Thaw in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave (cook immediately after thawing).
