For best quality and safety, fresh jalapenos should be stored in the refrigerator.

Refrigerator

1-2 weeks

Store unwashed fresh jalapenos in a plastic bag or the crisper drawer of your refrigerator. Wash only before use.

Freezer

10-12 months

Wash, stem, and seed the jalapenos. You can chop or slice them as desired. Blanching is not required. Pack into freezer bags or airtight containers, removing as much air as possible.

Signs of Spoilage

  • Soft spots or mushy texture
  • Sliminess
  • Mold growth (fuzzy white, green, or black spots)
  • Significant discoloration or darkening
  • Off-odor

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Fresh jalapenos should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), they should not be left out for more than 1 hour.
