Ricotta cheese is a perishable dairy product and should not be stored at room temperature. Refrigerate promptly.
Refrigerator
3-5 days after opening, 1 week unopened
Store ricotta cheese in its original container or an airtight container in the coldest part of the refrigerator, typically at or below 40°F (4°C).
Freezer
1-2 months (for best quality, safe indefinitely)
While safe to freeze, ricotta cheese's texture may become grainy or watery upon thawing. For best quality, freeze in an airtight container, leaving some headspace. Thaw slowly in the refrigerator.
Signs of Spoilage
- Sour or off odor
- Visible mold (often green, blue, or black spots)
- Discoloration (e.g., yellowing or browning)
- Slimy or watery texture
- Excess liquid separating from the cheese
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate ricotta cheese after purchase and use. Discard any ricotta cheese left in the danger zone for too long to prevent the growth of harmful bacteria.
