Homemade roasted peppers or commercially jarred roasted peppers once opened should not be stored at room temperature. Unopened commercially jarred roasted peppers are shelf-stable until opened.
Refrigerator
3-4 days
Store roasted peppers in a shallow airtight container. For commercially jarred roasted peppers, refrigerate promptly after opening.
Freezer
10-12 months
Store roasted peppers in airtight freezer bags or containers. For best quality, freeze in small portions.
Signs of Spoilage
- Mold growth
- Off-odor (sour or unpleasant smell)
- Slimy or sticky texture
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Refrigerate or freeze roasted peppers promptly after cooking or opening to prevent bacterial growth. Discard any roasted peppers left in the danger zone for too long.
Safe Handling
Cool roasted peppers rapidly before refrigerating or freezing. Divide large amounts into shallow containers to cool faster.
