Cooked mushrooms should be refrigerated promptly and not stored at room temperature for extended periods.
Refrigerator
3-4 days
Store roasted shiitake mushrooms in a shallow, airtight container to ensure rapid and even cooling. Place in the coldest part of the refrigerator.
Freezer
10-12 months
Cool completely before freezing. Store in airtight freezer-safe containers or heavy-duty freezer bags. Label with the date of freezing.
Signs of Spoilage
- Slimy or sticky texture
- Sour or off-odor
- Visible mold growth
- Unusual darkening or discoloration
Room Temperature Safety
40°F–140°F
Do not leave roasted shiitake mushrooms at room temperature (between 40°F and 140°F) for more than 2 hours. If the temperature is above 90°F (32°C), discard after 1 hour.
Safe Handling
Refrigerate roasted shiitake mushrooms within 2 hours of cooking. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.
Reheat any leftovers to an internal temperature of 165°F (74°C).
Avoid cross-contamination by using separate cutting boards and utensils for raw and cooked foods.
