Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Discard any sliced romaine lettuce that has been left at room temperature (between 40°F and 140°F) for more than 2 hours (or 1 hour if above 90°F).
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Even if pre-washed, rinse sliced romaine lettuce under cool running water just before use. Do not use soap or detergents.
Dry lettuce thoroughly with a clean cloth or paper towel, or use a salad spinner, to maintain crispness.
Prevent cross-contamination by keeping lettuce separate from raw meat, poultry, and seafood.
Store in a clean refrigerator at 40°F (4°C) or below.
