Roquefort cheese requires refrigeration to maintain safety and quality. Do not store at room temperature.
Refrigerator
1-2 weeks (opened)
Store Roquefort cheese tightly wrapped in plastic wrap, foil, or parchment paper, then placed in an airtight container to prevent drying out and absorbing odors. Store in the coldest part of the refrigerator.
Freezer
6 months
While safe to freeze, freezing may alter the texture of Roquefort cheese, making it more crumbly. Wrap tightly in plastic wrap, then in aluminum foil or a freezer bag to prevent freezer burn.
Signs of Spoilage
- Unpleasant, sour, or ammonia-like odor (beyond its natural aroma)
- Development of mold that is not part of the original cheese (e.g., fuzzy white, black, or pink mold on the rind or cut surfaces)
- Slimy or sticky texture on the surface
- Significant discoloration or hardening that is not typical for the cheese
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
To ensure safety, refrigerate Roquefort cheese promptly after purchase and after each use. Discard any cheese left in the danger zone for too long.
Safe Handling
Always wash hands before and after handling cheese.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and other foods, especially raw meats.
If the cheese develops mold beyond the intentional blue veins, or if it has an off-odor or slimy texture, discard it.
Do not leave Roquefort cheese at room temperature for more than 2 hours.
