Fresh sage should not be stored at room temperature for extended periods. For dried sage, store in a cool, dark, dry place away from direct sunlight and heat.

Refrigerator

1-2 weeks

Wrap fresh sage in a damp paper towel and place in a plastic bag, or store upright in a glass of water, covered loosely with a plastic bag. Store in the crisper drawer.

Freezer

10-12 months

Wash and pat dry. You can freeze whole leaves on a baking sheet and then transfer to a freezer-safe bag, or chop and freeze in ice cube trays with water or olive oil.

Signs of Spoilage

  • Slimy or mushy texture
  • Darkening or blackening of leaves
  • Mold growth
  • Off-odor

Room Temperature Safety

The 2-hour rule applies: Perishable foods, including fresh herbs, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Refrigerate fresh sage promptly after purchase. Discard any fresh sage left in the danger zone for too long.
