Not recommended

Opened salami should be refrigerated immediately to maintain safety and quality.

Refrigerator

3 weeks

Store tightly wrapped in its original packaging or in an airtight container to prevent drying out and absorb odors. Keep at 40°F (4°C) or below.

Freezer

1-2 months

For best quality, wrap tightly in heavy-duty aluminum foil or freezer wrap, or place in a heavy-duty freezer bag. Label with the date.

Signs of Spoilage

  • Sour or off-odor
  • Slimy or sticky texture
  • Unusual discoloration (e.g., greenish or grayish spots)
  • Visible mold growth (other than intentional, safe mold on certain casings)

Room Temperature Safety

The 2-hour rule applies: Do not leave opened salami at room temperature for more than 2 hours.

The danger zone for food is between 40°F (4°C) and 140°F (60°C).

If the ambient temperature is above 90°F (32°C), the safe holding time at room temperature is reduced to 1 hour. Discard any opened salami left out longer than these times.
