Sea urchin must be kept refrigerated or frozen to maintain safety and quality.
Refrigerator
1-2 days
Store fresh sea urchin in the coldest part of the refrigerator, ideally on ice in a perforated container to allow drainage, or in its shell wrapped in a damp cloth. Consume as soon as possible.
Freezer
3-6 months
For best quality, shuck the sea urchin and freeze the roe (uni) in an airtight container or vacuum-sealed bag. Thaw slowly in the refrigerator.
Signs of Spoilage
- Strong, fishy, or ammonia-like odor
- Slimy or sticky texture
- Dull or discolored appearance
- Soft or mushy texture (for the roe)
- Broken or damaged shell (for whole sea urchin)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze sea urchin. Discard any sea urchin left in the danger zone for too long.
Safe Handling
Keep sea urchin cold; refrigerate promptly after purchase.
Avoid cross-contamination by keeping raw sea urchin separate from other foods.
Wash hands, cutting boards, utensils, and countertops with hot, soapy water after handling raw seafood.
If consuming raw, ensure it is from a reputable source and handled with extreme care.
