Sea urchin must be kept refrigerated or frozen to maintain safety and quality.

Refrigerator

1-2 days

Store fresh sea urchin in the coldest part of the refrigerator, ideally on ice in a perforated container to allow drainage, or in its shell wrapped in a damp cloth. Consume as soon as possible.

Freezer

3-6 months

For best quality, shuck the sea urchin and freeze the roe (uni) in an airtight container or vacuum-sealed bag. Thaw slowly in the refrigerator.

Signs of Spoilage

  • Strong, fishy, or ammonia-like odor
  • Slimy or sticky texture
  • Dull or discolored appearance
  • Soft or mushy texture (for the roe)
  • Broken or damaged shell (for whole sea urchin)

Room Temperature Safety

Perishable food should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Promptly refrigerate or freeze sea urchin. Discard any sea urchin left in the danger zone for too long.
