Fresh mushrooms require refrigeration for optimal safety and quality. Pantry storage is not suitable for fresh shiitake mushrooms.

Refrigerator

4-7 days

Store unwashed fresh shiitake mushrooms in a paper bag or their original packaging in the refrigerator. Avoid storing in airtight plastic bags, as this can trap moisture and accelerate spoilage.

Freezer

10-12 months

For best quality, clean and slice shiitake mushrooms, then blanch or sauté them before freezing. Freeze in a single layer on a baking sheet, then transfer to airtight freezer bags or containers.

Signs of Spoilage

  • Slimy or sticky texture
  • Dark spots or significant discoloration
  • Foul or sour odor
  • Visible mold growth

Room Temperature Safety

The 2-hour rule applies: Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Fresh shiitake mushrooms should be refrigerated promptly. Discard any mushrooms left at room temperature within the danger zone for longer than the recommended time limits.
