Fresh mushrooms require refrigeration for optimal safety and quality. Pantry storage is not suitable for fresh shiitake mushrooms.
Refrigerator
4-7 days
Store unwashed fresh shiitake mushrooms in a paper bag or their original packaging in the refrigerator. Avoid storing in airtight plastic bags, as this can trap moisture and accelerate spoilage.
Freezer
10-12 months
For best quality, clean and slice shiitake mushrooms, then blanch or sauté them before freezing. Freeze in a single layer on a baking sheet, then transfer to airtight freezer bags or containers.
Signs of Spoilage
- Slimy or sticky texture
- Dark spots or significant discoloration
- Foul or sour odor
- Visible mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Fresh shiitake mushrooms should be refrigerated promptly. Discard any mushrooms left at room temperature within the danger zone for longer than the recommended time limits.
Safe Handling
Do not wash fresh shiitake mushrooms until immediately before use. Wipe clean with a damp cloth or soft brush to remove any dirt.
Cook shiitake mushrooms thoroughly to an internal temperature of 165°F (74°C) if incorporating into dishes with other ingredients, or to desired doneness for standalone consumption.
Prevent cross-contamination by using separate cutting boards and utensils for mushrooms and raw meats or poultry.
