Fresh shiitake mushrooms should not be stored at room temperature for extended periods as they will spoil quickly. Refrigeration is essential.

Refrigerator

5-7 days

Store fresh, unwashed shiitake mushrooms in their original packaging or in a paper bag in the refrigerator. Avoid storing in airtight plastic bags, which can trap moisture and accelerate spoilage.

Freezer

10-12 months

For best quality, shiitake mushrooms should be blanched or sautéed before freezing. Cool completely, then pack into airtight freezer bags or containers.

Signs of Spoilage

  • Slimy or sticky texture
  • Dark spots or discoloration
  • Strong, unpleasant odor
  • Shriveled or dried-out appearance
  • Mold growth

Room Temperature Safety

Perishable foods, including fresh mushrooms, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
