Fresh shiitake mushrooms should not be stored at room temperature for extended periods as they will spoil quickly. Refrigeration is essential.
Refrigerator
5-7 days
Store fresh, unwashed shiitake mushrooms in their original packaging or in a paper bag in the refrigerator. Avoid storing in airtight plastic bags, which can trap moisture and accelerate spoilage.
Freezer
10-12 months
For best quality, shiitake mushrooms should be blanched or sautéed before freezing. Cool completely, then pack into airtight freezer bags or containers.

- Dark spots or discoloration
- Strong, unpleasant odor
- Shriveled or dried-out appearance

Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or cook fresh mushrooms after purchase. Discard any mushrooms left in the danger zone for too long.
Safe Handling
Wash mushrooms gently under cool running water or wipe with a damp cloth just before use. Avoid soaking.
Trim off any tough or woody stems.
Prevent cross-contamination by keeping raw mushrooms separate from raw meats, poultry, and seafood.
Cook mushrooms to an appropriate temperature for recipes; while often eaten raw in small amounts, cooking enhances flavor and texture.
