Fresh mushrooms require refrigeration to maintain quality and safety. Pantry storage will lead to rapid spoilage.

Refrigerator

5 to 7 days

Store fresh shiitake mushrooms unwashed in their original packaging or in a paper bag in the main compartment of the refrigerator. Avoid airtight containers as they trap moisture and accelerate spoilage.

Freezer

10 to 12 months

For best quality, clean and slice shiitake mushrooms, then blanch or sauté them before freezing. Pack in airtight freezer bags or containers.

Signs of Spoilage

  • Slimy or sticky texture
  • Dark spots or discoloration
  • Foul or sour odor
  • Visible mold growth

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including fresh or cooked mushrooms, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Refrigerate fresh mushrooms promptly upon purchase. Cooked mushrooms should be refrigerated within 2 hours of cooking.
