Fresh mushrooms are highly perishable and best stored in the refrigerator. If stored briefly at room temperature, keep in a cool, dry place in a paper bag.

Refrigerator

5-7 days

Store fresh shimeji mushrooms in their original packaging or a paper bag in the main compartment of the refrigerator. Do not wash until just before use to prevent premature spoilage.

Freezer

10-12 months

Clean and slice mushrooms. Blanch or sauté before freezing. Pack in airtight freezer bags or containers, removing as much air as possible.

Signs of Spoilage

  • Slimy or sticky texture
  • Darkening or discoloration
  • Foul or sour odor
  • Visible mold growth
  • Shriveled or dried appearance

Room Temperature Safety

Perishable foods, including fresh shimeji mushrooms, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.
