Store unopened packages in a cool, dry, dark place away from direct sunlight and moisture. Once opened, it is highly susceptible to moisture and odor absorption; refrigeration is strongly recommended.
Refrigerator
1 month (opened)
Once opened, transfer to an airtight container or heavy-duty freezer bag to prevent moisture absorption and maintain freshness. Keep away from strong-smelling foods.
Freezer
6-12 months (for best quality)
For extended storage, place in a heavy-duty freezer bag or airtight container to prevent freezer burn and moisture absorption. While safe indefinitely, quality is best within 6-12 months.
Signs of Spoilage
- Visible mold growth (fuzzy spots, discoloration)
- Off-odor (rancid, sour, unusually strong fishy smell)
- Changes in texture (clumping, excessive stickiness, unusual softness)

Room Temperature Safety
Not applicable to the dry product itself. For rehydrated or prepared dishes containing bonito, the danger zone is 40°F–140°F (4°C–60°C).
Keep opened shredded dried bonito in the refrigerator to prevent moisture absorption and mold growth. If used in a prepared dish, promptly refrigerate leftovers within 2 hours (1 hour if ambient temperature is above 90°F/32°C).
