Homemade or opened simple syrup should always be refrigerated. Unopened commercially bottled simple syrup may be stored in a cool, dark pantry until its 'best by' date.

Refrigerator

2-4 weeks

Store in a clean, airtight container. Ensure the container is sterilized before filling. Higher sugar concentrations (2:1 sugar to water) may last longer than standard (1:1) simple syrup.

Freezer

Up to 6 months

Freeze in ice cube trays for easy portioning, then transfer to freezer-safe bags or containers. Leave headspace for expansion.

Signs of Spoilage

  • Cloudy appearance
  • Off-odor (sour or fermented smell)
  • Presence of mold (fuzzy spots, often white, green, or black)
  • Bubbles or fizzing (indicating fermentation)

Room Temperature Safety

The 2-hour rule applies: Do not leave simple syrup at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

Simple syrup, especially homemade or opened, is susceptible to microbial growth in the danger zone. Promptly refrigerate or discard any simple syrup left at room temperature beyond the safe time limits.
