Sliced bell peppers should not be stored at room temperature. Whole, unsliced bell peppers can be stored in a cool, dark place for a very short period, but refrigeration is preferred for optimal freshness and safety.
Refrigerator
3-4 days
Store sliced bell peppers in a clean, airtight container or a sealed plastic bag in the crisper drawer of the refrigerator. Wash bell peppers thoroughly before slicing.
Freezer
8-12 months
Wash, core, and slice bell peppers. Spread in a single layer on a baking sheet and freeze until solid (flash freeze). Transfer to freezer bags or airtight containers, removing as much air as possible. Blanching is not required but can help preserve texture and color.
Signs of Spoilage
- Soft or slimy texture
- Mold growth (fuzzy spots, any color)
- Off-odor or sour smell
- Significant discoloration (dark spots, dullness)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze sliced bell peppers after preparation. Discard any sliced bell peppers left at room temperature for longer than the recommended time limits.
Safe Handling
Wash hands thoroughly with soap and water before and after handling bell peppers.
Wash bell peppers under running water before slicing, even if you plan to peel them.
Use clean cutting boards, utensils, and containers to prevent cross-contamination.
Keep sliced bell peppers separate from raw meat, poultry, and seafood.
