Pantry
1-2 years (dried)
Store dried somen in a cool, dry place, away from direct sunlight. Keep in original sealed packaging or an airtight container.
Refrigerator
3-4 days (cooked)
Store cooked somen in shallow, airtight containers. Refrigerate promptly within 2 hours of cooking.
Freezer
1-2 months (cooked)
Store cooked somen in airtight freezer bags or containers. Label with the date. Thaw in the refrigerator before reheating.
Signs of Spoilage
- Sour or off odor
- Slimy or sticky texture
- Visible mold
- Discoloration
Room Temperature Safety
40°F–140°F
Cooked somen should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour.
Safe Handling
Cook somen to an internal temperature that is safe for consumption, typically boiling water until tender.
Refrigerate cooked somen within 2 hours of cooking or removal from heat.
Do not leave cooked somen at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Reheat cooked somen thoroughly to an internal temperature of 165°F (74°C).
Prevent cross-contamination by using separate cutting boards and utensils for raw ingredients and cooked somen.
