Sour cream is a perishable dairy product and should not be stored at room temperature. Refrigerate promptly after purchase.
Refrigerator
1 to 3 weeks (after opening)
Keep sour cream tightly covered in its original container or an airtight container. Store in the coldest part of the refrigerator.
Freezer
Not recommended (texture changes)
While safe from a food safety perspective, freezing sour cream is not recommended due to significant texture changes. It tends to separate and become watery or grainy upon thawing. If frozen, stir well after thawing to attempt to reincorporate liquids.
Signs of Spoilage
- Visible mold growth on the surface or sides of the container
- An off-odor that is sourer than usual, yeasty, or moldy
- Significant discoloration, such as yellow or green spots
- A watery or separated texture that does not mix back in with stirring
- An unusual slimy or sticky texture
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate sour cream after purchase and after each use. Discard any sour cream left in the danger zone for too long.
Safe Handling
Keep sour cream refrigerated at 40°F (4°C) or below at all times.
Do not leave sour cream at room temperature for more than 2 hours (1 hour if the ambient temperature is above 90°F/32°C).
Always use clean utensils to scoop sour cream to prevent introducing bacteria and cross-contamination.
Discard any sour cream that has been left out at room temperature for too long.
