  • Slimy or sticky texture
  • Discoloration (greenish, grayish)
  • Mold growth (if thawed and left too long)

Room Temperature Safety

40°F–140°F (4°C–60°C)

Never leave perishable food, including thawed chicken, out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Bacteria multiply rapidly in the danger zone.

Expert Tips

Safe Handling

1

Thaw frozen chicken safely: in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw on the counter.

2

Cook all poultry products to a safe minimum internal temperature of 165°F (74°C) as measured with a food thermometer.

3

Prevent cross-contamination by washing hands, cutting boards, utensils, and countertops with hot, soapy water after contact with raw chicken.

4

Do not wash raw chicken as this can spread bacteria to other foods and surfaces.
