Do not refrigerate raw sweet potatoes as it can cause a hard core, undesirable flavor, and accelerate spoilage. Store cooked sweet potatoes in a shallow airtight container.
Freezer

Cooked sweet potatoes (mashed, pureed, or baked) can be frozen. Cool completely before freezing in airtight containers or heavy-duty freezer bags. Raw sweet potatoes do not freeze well.
