Tapa is a perishable cooked meat product and should not be stored at room temperature for extended periods. Refrigerate promptly.
Refrigerator
3-4 days
Store cooked tapa in a shallow, airtight container to ensure rapid cooling and prevent contamination. Place in the coldest part of the refrigerator.
Freezer
2-3 months for best quality, safe indefinitely
For best quality, wrap cooked tapa tightly in heavy-duty aluminum foil or freezer wrap, or place in freezer-safe bags or airtight containers. Label with the date.
Signs of Spoilage
- Sour or off-odors
- Slimy or sticky texture
- Mold growth
- Significant discoloration
Room Temperature Safety
40°F–140°F
Perishable foods, including cooked tapa, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.
Safe Handling
If preparing tapa from raw beef, cook to an internal temperature of 145°F (63°C) for whole cuts, followed by a 3-minute rest time, or 160°F (71°C) for ground beef.
Prevent cross-contamination by using separate cutting boards and utensils for raw and cooked meats.
Refrigerate cooked tapa within 2 hours of cooking (1 hour if ambient temperature is above 90°F/32°C).
Reheat cooked tapa thoroughly to 165°F (74°C) before serving.
