Refrigerate or freeze immediately. Do not store raw meat mixtures at room temperature.
Refrigerator
1-2 days
Store in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at or below 40°F (4°C).
Freezer
3-4 months
For best quality, wrap tightly in heavy-duty aluminum foil, freezer wrap, or place in freezer bags or airtight containers. Label with the date. Thaw in the refrigerator, never at room temperature.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., gray or green patches)
- Mold growth
Room Temperature Safety
40°F–140°F
Perishable foods, including raw meat mixtures, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.
Safe Handling
Cook all raw meat mixtures to a safe internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Prevent cross-contamination by keeping raw meat mixtures separate from other foods, especially ready-to-eat items.
Wash hands thoroughly with soap and water before and after handling raw meat mixtures.
Clean and sanitize all cutting boards, utensils, dishes, and countertops that come into contact with raw meat mixtures.
Never refreeze raw meat mixtures that have been thawed unless they are cooked first.
