Raw ground beef should never be stored at room temperature for extended periods due to rapid bacterial growth.
Refrigerator
1-2 days
Store thawed ground beef in its original packaging or in a clean container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Cook or refreeze within 1-2 days.
Freezer
3-4 months
If thawed in the refrigerator, raw ground beef can be refrozen within 1-2 days, though quality may decrease. Do not refreeze raw ground beef that was thawed using cold water or a microwave unless it has been cooked first.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Significant discoloration (e.g., gray or brown spots)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4.4°C) and 140°F (60°C).
Never leave thawed ground beef in the 'Danger Zone' for longer than the recommended time. Discard any ground beef that has been left out too long.
Safe Handling
Thaw ground beef safely in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
Cook all ground beef to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw ground beef.
Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw and cooked ground beef. Clean all surfaces that come into contact with raw meat immediately.
