Pantry
Until 'best by' date (for unopened shelf-stable tofu)
Store unopened, shelf-stable (aseptic package) tofu in a cool, dry place. Once opened, it must be refrigerated.
Refrigerator
3-5 days (opened); Until 'use-by' date (unopened, refrigerated)
Store opened tofu in an airtight container, submerged in fresh water. Change the water daily to maintain freshness. Store unopened refrigerated tofu in its original packaging.
Freezer
3-4 months
Drain and press tofu thoroughly before freezing to remove excess water. Cut into desired portions. Freeze in an airtight container or freezer bag. Thaw in the refrigerator.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., pink, green, or black spots)
- Visible mold growth
- Bulging or leaking packaging (for unopened tofu)
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Always refrigerate tofu promptly. If left in the danger zone for too long, discard it, even if it looks and smells fine.
Safe Handling
Always keep tofu refrigerated after opening, regardless of its original packaging type.
Change the water daily for opened tofu stored in the refrigerator to prevent bacterial growth.
Thaw frozen tofu in the refrigerator, not at room temperature.
Wash hands, cutting boards, utensils, and countertops with hot, soapy water after handling raw or opened tofu to prevent cross-contamination.
