Truffles are highly perishable and should not be stored at room temperature for extended periods. Store in the refrigerator immediately.

Refrigerator

7-10 days

Store fresh truffles unwashed in an airtight container lined with a paper towel. Change the paper towel daily to absorb moisture. Do not store in water. Keep away from strong-smelling foods.

Freezer

8-12 months

Wrap individual truffles tightly in plastic wrap, then place in an airtight freezer bag or container. They can also be grated and mixed with butter or oil before freezing for culinary use.

Signs of Spoilage

  • Soft or mushy texture
  • Strong, unpleasant or ammonia-like odor (beyond its natural earthy aroma)
  • Visible mold (other than its natural outer layer, if applicable)
  • Significant discoloration

Room Temperature Safety

Perishable food should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), the limit is 1 hour.

40°F–140°F

To prevent the growth of harmful bacteria, fresh truffles should be refrigerated promptly and not left in the 'Danger Zone' (40°F–140°F) for extended periods.
