Fresh truffles are highly perishable and should not be stored at room temperature for extended periods. They should be refrigerated immediately.

Refrigerator

5-7 days

Store fresh truffles unwashed, wrapped in a paper towel, inside an airtight container. Change the paper towel daily to absorb moisture. Storing with rice or eggs can impart flavor but does not extend shelf life.

Freezer

10-12 months

Clean truffles gently with a soft brush (do not wash). Ensure they are completely dry. Store whole or grated in an airtight freezer-safe bag or container. Freezing may alter texture and diminish aroma slightly.

Signs of Spoilage

  • Soft or slimy texture
  • Strong, unpleasant, or ammonia-like odor
  • Visible mold growth
  • Significant discoloration

Room Temperature Safety

Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Fresh truffles should be refrigerated as soon as possible after purchase. Discard any truffles left in the danger zone for longer than the recommended time.
