40°F–140°F (4°C–60°C)

Perishable foods, including raw turkey breast, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

Expert Tips

Safe Handling

1

Cook all raw turkey products to an internal temperature of 165°F (74°C) as measured with a food thermometer.

2

Prevent cross-contamination by washing hands thoroughly with soap and water before and after handling raw turkey. Use separate cutting boards, plates, and utensils for raw and cooked poultry.

3

Thaw frozen turkey breast in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.

4

Marinate raw turkey in the refrigerator, not at room temperature.
