Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze cooked lasagna to prevent bacterial growth. Discard any lasagna left in the danger zone for too long.
Safe Handling
Reheat all leftovers, including veggie lasagna, to an internal temperature of 165°F (74°C) as measured with a food thermometer.
When reheating in a microwave, cover and rotate the food for even heating. Allow standing time. Reheat until steaming hot.
Do not leave cooked lasagna at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Prevent cross-contamination by using separate cutting boards and utensils for raw ingredients (if preparing from scratch) and cooked foods.
