Unopened commercial vinaigrette can be stored in the pantry until its 'best by' date. Once opened or if homemade, it must be refrigerated for safety and quality.

Store in an airtight container. Always refrigerate opened commercial vinaigrette and all homemade vinaigrette. Shake well before each use.
Freezer

Freezing is not recommended as it can cause the emulsion to break, leading to separation and changes in texture and flavor upon thawing.
Signs of Spoilage
- Off-odor (sour, rancid)
- Visible mold growth
- Significant discoloration
- Unusual separation that does not recombine with shaking
- Fizzy appearance or bubbling
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Vinaigrette, especially homemade or opened commercial, should not be left at room temperature for extended periods. Promptly refrigerate after use to prevent bacterial growth.
