Freezing may cause the oil and vinegar to separate, and other ingredients to change texture. While safe to consume, quality will be significantly degraded upon thawing.

Signs of Spoilage

  • Visible mold growth
  • Significant discoloration
  • Unusual separation or curdling (beyond normal oil/vinegar separation that can be shaken)
  • Fizzy appearance or bubbling

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Perishable foods, including opened or homemade vinaigrette, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour.
