Raw ground meat should never be stored at pantry temperatures. It must be kept refrigerated or frozen.
Refrigerator
1-2 days
Store raw wagyu burger patties in their original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at or below 40°F (4°C).
Freezer
3-4 months
For best quality, wrap raw wagyu burger patties tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a freezer-safe bag, removing as much air as possible. Label with the date. Maintain freezer temperature at 0°F (-18°C) or below.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-brown color (instead of bright red)
- Mold growth
Room Temperature Safety
40°F–140°F
Do not leave raw wagyu burger patties at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave out for more than 1 hour. Bacteria multiply rapidly in the danger zone.
Safe Handling
Cook all ground beef, including wagyu burgers, to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water before and after handling raw meat.
Use separate cutting boards, plates, and utensils for raw meat and ready-to-eat foods to prevent cross-contamination.
Thaw frozen wagyu burgers in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
Marinate raw meat in the refrigerator, not on the counter.
