For optimal quality and safety, all cheese, especially once opened, should be refrigerated. Pantry storage is not recommended.
Refrigerator
Unopened package: 6 months; Opened package: 3-4 weeks
Store in its original packaging until opened. Once opened, wrap tightly in plastic wrap, foil, or place in an airtight container to prevent drying out and absorption of odors. Store in the coldest part of the refrigerator.
Freezer

While safe to freeze, freezing may alter the texture of cheddar cheese, making it more crumbly. For best results, freeze in small blocks or shredded portions, wrapped tightly to prevent freezer burn. Thaw in the refrigerator.
Signs of Spoilage
- Visible mold (other than intentional molds on certain cheeses)
- Sour, ammonia-like, or off-odors
- Slimy or sticky texture
- Significant discoloration beyond normal variations
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate cheese promptly after purchase and after each use. Discard any cheese left in the danger zone for longer than the recommended time limits.

Keep cheese refrigerated at 40°F (4°C) or below.
Always use clean utensils and cutting surfaces to prevent cross-contamination.
If mold appears on hard cheese like cheddar, cut off at least 1 inch around and below the mold spot. The remaining cheese should be safe to eat. Discard soft cheeses with mold.
Do not leave cheese at room temperature for extended periods.
