Mushrooms require refrigeration to maintain freshness and prevent spoilage. Pantry storage will significantly reduce shelf life and quality.
Refrigerator
5-7 days
Store fresh, unwashed mushrooms in their original packaging or a paper bag in the refrigerator. Avoid storing in airtight containers, as this can trap moisture and accelerate spoilage. Do not wash until ready to use.
Freezer
10-12 months
For best quality, mushrooms should be cooked or blanched before freezing. Slice or quarter, then sauté or steam until tender. Cool completely, then pack into airtight freezer bags or containers.
Signs of Spoilage
- Slimy or sticky texture
- Dark spots or discoloration
- Shriveled appearance
- Mold growth (fuzzy white, green, or black spots)
- Strong, unpleasant, or ammonia-like odor
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To ensure safety, fresh mushrooms should be refrigerated promptly after purchase and kept out of the danger zone. Discard any mushrooms left at room temperature beyond the recommended time limits.
Safe Handling
Do not wash mushrooms until immediately before use to prevent premature spoilage.
Brush off any dirt with a soft brush or damp cloth, or rinse quickly under cool water and pat dry thoroughly.
Keep fresh mushrooms separate from raw meats, poultry, and seafood to prevent cross-contamination.
Always wash hands thoroughly with soap and water before and after handling fresh produce.
