White sesame pasteShelf Life, Storage, and Spoilage Guide
Pantry
1-2 years (unopened); Not recommended once opened
Store unopened in a cool, dark place away from direct sunlight. Once opened, refrigeration is strongly recommended to maintain quality and prevent rancidity.
Refrigerator
2-3 months (opened)
Store opened sesame paste in an airtight container in the refrigerator. Oil separation is natural; stir well before use.
Freezer
6 months to 1 year (for best quality)
While safe indefinitely, for best quality, freeze in an airtight container. Thaw in the refrigerator. Texture may change slightly upon thawing; stir well.
Signs of Spoilage
- Rancid, bitter, or sour smell (often described as paint-like or metallic)
- Visible mold growth (any color)
- Significant discoloration or darkening
- Extremely hard, dry, or crumbly texture that cannot be stirred
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
While unopened sesame paste is shelf-stable, once opened, it is best to refrigerate it. If left out, adhere strictly to the 2-hour rule to prevent bacterial growth and rancidity.
Safe Handling
Always use clean utensils to scoop out paste to prevent contamination.
Ensure the lid is tightly sealed after each use to prevent air exposure and rancidity.
If oil separation occurs, stir the paste thoroughly to reincorporate the oil before use.
