Pantry
Up to 1 week (unripe)
Store unripe, whole mangoes at room temperature until they yield to gentle pressure. Do not refrigerate unripe mangoes as it can stop the ripening process. Keep away from direct sunlight.
Refrigerator
5-7 days (ripe, whole); 3-5 days (cut)
Refrigerate ripe, whole mangoes to slow down the ripening process. Store cut mangoes in an airtight container to maintain freshness and prevent odor absorption.
Freezer
10-12 months
Peel, pit, and slice or dice mangoes before freezing. Pack in airtight freezer bags or rigid containers, removing as much air as possible to prevent freezer burn.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth (fuzzy white, green, or black spots)
- Sour, fermented, or off-odor
- Discoloration beyond normal ripening changes
- Slimy or sticky surface
Room Temperature Safety
40°F–140°F
Do not leave cut mangoes at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), refrigerate or discard within 1 hour.
Safe Handling
Wash whole mangoes thoroughly under cool running water before peeling or cutting to remove dirt and surface bacteria.
Use clean cutting boards and utensils to prevent cross-contamination.
Refrigerate cut mangoes promptly within 2 hours of preparation.
